Straight answer
Record the termination date on the customer's Form 1583 and in the USPS Customer Registration Database as soon as practical. Then, for at least six months after termination, remail the former customer's mail to the forwarding address they gave you, with new postage. After that, follow your postmaster's direction, usually returning it to the Post Office.

The termination date, on the Form 1583 and in the CRD, plus the forwarding address you will remail to. Do it as soon as practical, not at the next quarterly certification.
In Innbocks, canceling a customer records the termination date on the record and opens a CRD task in the readiness ledger, so the USPS entry is on a list rather than in someone's head.
USPS requires the CMRA to apply new postage. Whether you recover that cost from the former customer is your policy, set in your terms before they cancel.
The rule in DMM 508.1.8 is that the CMRA remails the former customer's mail for at least six months with new postage. It does not say the CMRA must absorb the cost. Some stores charge a forwarding fee at cancellation, some hold a postage deposit, and some fold six months of remail into the plan. Typical independent-store forwarding fees run postage plus $3 to $10 handling; whatever you choose, put it in the terms the customer agreed to.
Your remail duty ends. Mail that still arrives for the former customer can be returned to the Post Office rather than forwarded, following your postmaster's direction.
Once the six-month window closes, you are no longer required to forward. Most operators return anything that still arrives to the Post Office, endorsed to show the addressee is no longer at the address, so the sender is corrected. Ask your postmaster how they want it handled, and keep the Form 1583 on file at least until the same six-month mark passes.
Customer termination rules
Termination dates, the remail duty, and retention, with the DMM references.
The customer record, approved Form 1583, ID data, and every logged mail item stay in your account after cancellation, and new arrivals for that customer can still be logged and forwarded.
Cancellation changes the customer's status; it does not erase them. The Form 1583 and its approval history remain available for an inspection, the termination date sits on the record, and the mail history keeps its tamper-evident chain of custody. When a letter arrives during the remail window, staff log it as usual and forward it to the address on file, so the remail duty is handled inside the same workflow as active mail.
Cancel a customer in Innbocks and the date is recorded, the CRD task opens, and remail runs through the normal forwarding flow.
